Who doesn’t love a fluffy pancake topped with fresh fruit and maple syrup for breakfast (or any time of day for that matter)?
Well you’re in luck since tomorrow is Shrove Tuesday and we’ve tried and tested an amazing vegan pancake recipe that is simple to make and that will give you the fluffiest of pancakes!

Ingredients (serves 4)
1 cup flour(125 g)
2 tablespoons organic sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup non-dairy milk (240 mL)
1 tablespoon apple cider vinegar
1 teaspoon vanilla
maple syrup, to serve
Preparation:
Add the flour, sugar, baking powder, and salt in a bowl and stir to combine.
Add your non dairy milk of choice, apple cider vinegar, and vanilla in a cup and stir to combine.
Pour the liquid mixture into the dry mixture and whisk until smooth.
Let batter rest for 5 minutes.
Pour about ½ cup (65 grams) of batter onto a nonstick pan over medium heat.
When the top of the pancake begins to bubble, flip the pancake and cook until golden.
Serve warm with maple syrup and fruit topping of choice. Enjoy!
